Winemaker Note & Critical Acclaim:

Grown on the slopes of Mount St. Helena in Knights Valley, the distinctive aromas and flavors of our proprietary blend of Cabernet Sauvignon, Cabernet Franc, and Merlot clearly display their hillside origins. Rocky, rhyolitic soils created through volcanic activity millennia ago, contribute a mineral richness and add to the wine’s complexity. Spanning 49 acres, Les Pavots ascends to an elevation of nearly 1,400 feet. Merlot and Cabernet Franc grow on the cool upper slopes and Cabernet Sauvignon grows just below.

Near black in color with saturated ruby and vermillion nuances, 2015 Les Pavots reveals a deep bouquet of cacao powder, dried blossoms, dried red fruit, black cherry and currant, blueberry and licorice, with nuances of cigar box, graphite, vanilla and black truffle with a stylish ‘garrigue’ touch. Extremely full-bodied, the palate echoes the nose with the same rich, ripe fruit tones and diverse spice notes. The mouth feel is dense, round and seamless, with supple tannins, savory clove and tobacco elements and beautiful ‘patina’ notes leading to a long finish with subtle mineral accents. The wine provides a classic presentation of our estate’s terroir and will age gracefully for two decades. About The Producer

In 1982, after six years of searching for land to serve as both vineyard and family retreat, Sir Peter Michael and Lady Michael purchased 630 acres of volcanic ridges on the western face of Mount St. Helena in Knights Valley. Following Sir Peters "100 by 100" vision 100% family ownership for at least 100 years and drawing inspiration from the great wineries of Burgundy and Bordeaux, the family hired like-minded viticulturists and winemakers to help them create terroir-driven wines that would stand the test of time. Today, with the support of son, Paul, and Paul's wife Emily, the Peter Michael winery still adheres to its original founding principles of mountain vineyards, classical winemaking, and limited production. The estate vineyards rest on steep hillsides ranging in elevation from 1000 to nearly 2000 feet. With 120 acres under vine, the winery is known for single-vineyard and estate grown Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, and Pinot Noir. Under the direction of winemaker Nicolas Morlet (who joined in Dec 2005), all Peter Michael wines are made using a non-interventionist, neo-classical approach, which relies on traditional, hands-on winemaking methods blended with the best of modern technology. Nicolas grew up working on his family's domain in Avenay Val d'Or, Champagne and later pursued educational & work opportunities that immersed him in the classical winemaking techniques of Champagne, Burgundy, & Bordeaux. Nicolas' passionate approach to classical winemaking with a sense of innovation is natural to Peter Michael Winery's philosophy.
